Description
You will love making this quick and easy recipe I adapted from a Biggest Looser program because you simply chop an onion and mince some garlic. The rest of the ingredients are in a can or box.
Ingredients
- 1 yellow onion, chopped
- 1 and 1/4 pounds lean ground turkey
- 1 (14.5oz) canned fire-roasted diced tomatoes, NOT drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 2 cups low-sodium chicken broth
- 2 tablespoons chopped fresh garlic
- 2 tablepsoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon mustard powder
- optional: sliced black olives or minced fresh chives to garnish
Instructions
- Coat a large Dutch oven with a few sprays of olive oil or other cooking spray. (You can use a large saucepan with a lid if you don’t have a dutch oven.) Heat on medium-high and add the onion. Season with a pinch of salt and saute until soft and just browning a bit.
- Add ground turkey and cook, breaking apart the turkey until no pink remains- 6 to 8 minutes.
- Add all other ingredients except for the olives into the pot or saucepan and stir to combine. Turn the heat to high until boiling and then turn to low. Cover and simmer for about 20 minutes.
- Remove from heat and serve into 1 cup servings and garnish with sliced olives.
Notes
Instant pot instructions:
Follow the recipe instructions above, using an Instant Pot set to saute, until step 3. Follow step 3, by locking the Instant Pot lid on and programming it to pressure cook for 4 minutes. Allow a natural pressure release for 5 minutes, then finish with the quick release. Open the lid and serve hot with garnishes if desired.
