Hey everyone! I’m really excited to be here today! My name is Shatzi and I blog over at Love and Laundry. I’m an Idaho mom of 3 kids and I love all kinds of things – cooking, sewing, reading, graphic/website design…pretty much anything that peaks my interest at the moment. I’ve known Emily forever and ever. Well, it seems like it. She is one of my oldest (longest?? We aren’t that old, are we?) and dearest friends. We pretty much grew up together, were college roommates, and after we grew up, we even used to live near each other and our kids got to be friends. Sadly, we live several states apart now. But we still love to keep up with each other and bond over blog/family/girl talk as often as we have time.
I’m here because Emily so kindly invited me to guest post. And as soon as she asked, I knew just what I wanted to share. These are my favorite cookies!! Back in 2013, my husband, Dave, and I went on a trip to Europe (Emily even helped watch our kids while we were gone on that trip!). We loved every part of it, especially the food. We spent several days in Paris and I absolutely fell in love with their chocolate croissants. But have you ever tried to make real croissants from scratch? They are super tricky and even harder when you try to add chocolate in. I definitely don’t have the skill of a French artisan baker. So, for a long time, I resigned myself to my chocolate-croissant-less existence.
Until….I ran across a recipe that was not exactly the same thing that I had eaten, but definitely a close second. I’ve made these several times and tweaked the recipe along the way until I found the perfect mix that works for me! And they are delicious!
One of the things I love most about these is how simple they are to make, and yet if you give them to your neighbor, they will totally think you slaved in the kitchen for hours! But these really are just as fast as your favorite chocolate chip cookie recipe – with the only addition being a hour chill time. They are also not overly sweet, which I think is a good thing sometimes. I love a good sugar rush as much as the next person, but sometimes it’s nice to have something that doesn’t send my sweet taste buds over the edge – and these cookies are perfect for that kind of craving!
