If I get up in the morning before my kids wake up then I usually have the time to fix myself a healthy breakfast.

They can be mild to hot so make sure you read the label before you throw them in your cart.

Delicious, fast and easy, just two of these plus a beverage of choice will fill you up in the morning.
- 6 ounces thinly sliced turkey (12 slices)
- 1/2 cup green chile sauce or canned chopped green chiles
- 12 large eggs
- 1/4 cup shredded cheddar cheese
- 2–3 Tablespoons chopped cilantro to garnish
- non-stick cooking spray
- Set your oven to heat to 400 degrees F. Spray a 12 cup muffin tin with non-stick cooking spray. Line each cup with a slice of turkey. Place about 1 tablespoon of green chile sauce/green chiles in the bottom of each cup, followed by one egg. Bake in the oven for 10-12 minutes until eggs are firm. Sprinkle each with cheese and cilantro and serve.
