Did you eat breakfast this morning?  Whether you did or not, let me entice you to make this fast and easy recipe for a Blueberry Lemon smoothie Bowl with Candied Cashews for breakfast or brunch tomorrow! All you’ll need is some Dannon Light & Fit Greek Yogurt, a frozen banana, a jar of Blueberry Lemon Smucker’s Fruit and Honey and some candied cashews.  I personally like to throw in some fresh fruit and chia seeds, but those are optional :0)

When I first heard of smoothie bowls, I kinda thought the idea was a bit weird…I had consumed my smoothies for years by cup and straw.  I finally decided I had to see what was so good about eating a smoothie via bowl and spoon. The main benefit I discovered: being able to load it up with chunks of fresh fruit, and have a crunchy element like granola or nuts. I really liked this new way of eating fresh fruit and nuts with my smoothies and I felt good knowing I was making a healthy breakfast choice.

As you may or may not know, Greek Yogurt has a higher protein content that other yogurts, and it’s thick tangy flavor makes it a great choice for smoothies. Protein helps us feel full longer and gives us more sustained energy. I like Dannon’s Light & Fit Greek yogurt because it’s perfect for mixing with all kinds of great fruit options to give you that healthy morning fuel to start your day out right! Plus it comes in a convenient 32 oz size and it has 35% fewer calories of other lowfat greek yogurts, so if you’re counting them daily this yogurt is a great option.

When creating this recipe for a Blueberry Lemon smoothie Bowl with Candied Cashews, I used Smucker’s Blueberry Lemon Fruit and Honey spread. I really like the idea of fruit preserves naturally sweetened with honey; there is NO sugar or artificial sweeteners in it at all! And it’s really delicious. Before I discovered this product, I would throw fresh fruit and about a tablespoon (or two) of honey into my blender when making my smoothies. Now I can replace this step with any flavor of Smucker’s Fruit and Honey and save my honey for other recipes. (I also slather this stuff on my freshly baked homemade bread; mmmmmm…..)

I recently discovered a bag of Sahale Snacks Pomegranate Vanilla Cashews at Target (The name says it all, they’re amazingly good) and I sprinkled these lovely candied vanilla pomegranate cashews onto my smoothie bowls for a nice crunchy element. They go great with this recipe (Not to mention I have always been a sucker for cashews; I love ’em!)

Ingredients

Scale
  • 1 frozen banana
  • 2 Tablespoons Smucker’s Blueberry Lemon Fruit and Honey spread
  • 1/2 cup Dannon Light & Fit Greek Yogurt
  • 1/3 cup coconut milk
  • 1 Tablespoon chia seeds
  • Sahale Pomegranate Vanilla Cashews for garnish

Instructions

  1. Place frozen banana, Fruit and Honey spread, yogurt, coconut milk and chia seeds in a blender and blend until smooth.
  2. Garnish with fresh berries and Cashews. Serve immediately.

    This recipe sounds delicious. I like that it has healthy ingredients like a banana and chia seeds. The cashews are a nice touch.
