You’ll love the fun flavors of this Strawberry Peach Coconut Smoothie Bowl. Top it with Muesli~ a mixture of nuts, dried fruits and often coconut~ for a fantastic flavor and texture combo! I know that fall is fast approaching, but it’s still hot and very summery here in the desert southwest. So I’m throwing in this end of summer recipe for you to enjoy!
There are endless amounts of smoothie recipes floating around the internet these days, and it’s easy to see why; smoothies are a fast, fun way to eat fresh fruits and veggies and to add more nutrition to your diet. Throwing in natural sweeteners and flavored powders along with yummy fruit especially makes otherwise ‘not so tasty but healthy’ veggies and leafy greens disappear down your throat in seconds. We feel good about ourselves for trying to do our bodies right. Right?!
Do you whip up a smoothie every day? I happen to know a few people that do. Eating fresh fruits, veggies, grains and greens is the best and most effective way to get all the vitamins, minerals and nutrients our bodies need. So skip the vitamin supplements and just whip up a great smoothie instead! Here’s a quote from a recent BBC article entitled “Why Vitamin Pills Don’t Work, and May Be Bad For You.” (Riley, Alex. BBC, n.p. 2016)

I imagine most of this stuff you’ve heard before, but it never hurts to have a reminder. We are so blessed in today’s society that most people reading this have easy access to a variety of fresh fruits and veggies. Even better, I encourage everyone to have fun growing some food at home! Whether in a garden, or just in a few pots around the house if you don’t have the room in your yard. I bought a jalapeno plant by accident last spring (someone put it in the bell pepper section and I didn’t notice) and that thing has been prolific! Jalapenos and other peppers are super nutritious, and having a fresh free supply all summer has been great for my upcoming cookbook!
So I share my own little smoothie creation today, this Strawberry Peach Coconut Smoothie Bowl topped with a Paleo Muesli made by Bob’s Red Mill. Mixing in the Muesli really makes this smoothie extra delicious and healthy too! My kids love to eat this smoothie plain with a cup and straw; of course you eat it however you like! The light and delicious flavor combination of peach, strawberry and coconut come together to make the perfect light breakfast or tasty treat!
- 1 cup coconut milk beverage
- 1 cup frozen peaches
- 1/3 cup frozen strawberries
- 1 tablespoon honey
- 1 teaspoon chia seeds
- Muesli and fresh fruit for garnish
- Place coconut milk, peaches, strawberries honey and chia seeds in a blender and blend until smooth.
- Garnish with Muesli and fresh fruit.
Bob’s Red Mill Paleo Museli mix makes an excellent topping for this smoothie. Granola with coconut will also taste great.
