I know life is busy for you right? You may look at these Easy Apple Turnovers and think- they look delish but I don’t have time for that. YES, you have time for these because they only take about 45 minutes from start to finish! They are crazy easy and delicious too, thanks to store bought pastry dough.
How to make homemade apple turnovers
Set your puff pastry sheets out on the counter about 45 minutes before you’re going to need them so they can warm to room temperature. Unroll and cut each sheet into 4 equal-sized squares, as shown below.
Peel your apples, core them and shred them in a food processor. No food processor? No problem. Skip coring your apples and grate them on a box grater. The fresh apple taste is amazing in these Easy Apple Turnovers!
Stir sugar and a bit of lemon juice into your freshly shredded apple to keep it from turning brown and give a kiss of sweetness :0) Dump the mixture into a sieve or other strainer placed over a bowl to allow excess apple juice to drain out. I am amazed at how much apple juice drains out in just 5 minutes!
Now you’re ready to place two tablespoons of apple filling on each puff pastry square.
Dip a finger into the excess apple juice and moisten two adjacent edges of each puff pastry square and fold over to form a triangle. Over fold by just a bit to help these Easy Apple Turnovers to stay closed while they bake.
Crimp the edges with a fork to form a tight seal. At this point if you like, you can cover them with plastic wrap and place them in the fridge overnight. Then bake them in the morning for delicious fresh fruit pastries! If not, proceed with the cinnamon and sugar!
With a wet finger or pastry brush (I recommend the brush if you have one), wet the tops of each pastry with the excess apple juice and sprinkle with cinnamon sugar. Bake in a 375 degree oven for 35 minutes and you have your very own beautiful home made pastries. Fresh from the oven Easy Apple Turnovers are a delight and are the perfect flaky, crumbly, light and sweet texture you crave from a fruit-filled pastry.

Using flaky store-bought puff pastry, all you need to make Easy Apple Turnovers is to shred up a few apples and mix in a bit of sugar and lemon juice. Sprinkle cinnamon sugar on top and pop them in the oven- get ready for super flaky, delicious, fresh Easy Apple Turnovers!
- 2 boxes of refrigerated puff pastry dough, with two sheets each (I like Pepperidge Farm)
- 2 Granny Smith apples
- 1 Ambrosia apple, or other sweet apple
- 2 teaspoons lemon juice
- two generous pinches of salt
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- Place puff pastry sheets on the counter to come to room temperature, about an hour.
- Peel and shred the apples, either with a box grater or food processor (just be sure to remove the cores first). Mix in the lemon juice, salt and sugar. Dump the apple mixture into a strainer placed over a bowl to remove excess liquid. Set your oven to heat to 375 degrees F.
- Cut each pastry sheet into four squares. Place two tablespoons of apple filling in the center of each one. Dip a finger into the excess apple juice and run it along two adjacent edges of a piece of dough. Fold the opposite corner over to the wetted sides and crimp closed with a fork. Repeat with the remaining dough squares and filling.
- Mix the cinnamon and sugar together.
- Move the Apple turnovers to a baking sheet with a spatula. Wet the top of the fritters lightly with water (with a pastry brush, water bottle, etc.) and sprinkle with cinnamon sugar mixture. Place them in the oven to bake for 35 minutes. Remove to a wire rack to cool for 10 minutes. Serve.
These apple turnovers can be made ahead thru step 3 and covered with plastic wrap in the fridge, up to 24 hours. When you’re ready to bake them, remove the plastic wrap and proceed with the recipe as written.
