Description

Using flaky store-bought puff pastry, all you need to make Easy Apple Turnovers is to shred up a few apples and mix in a bit of sugar and lemon juice. Sprinkle cinnamon sugar on top and pop them in the oven- get ready for super flaky, delicious, fresh Easy Apple Turnovers!


Ingredients

  • 2 boxes of refrigerated puff pastry dough, with two sheets each (I like Pepperidge Farm)
  • 2 Granny Smith apples 
  • 1 Ambrosia apple, or other sweet apple
  • 2 teaspoons lemon juice
  • two generous pinches of salt
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Place puff pastry sheets on the counter to come to room temperature, about an hour. 
  2. Peel and shred the apples, either with a box grater or food processor (just be sure to remove the cores first). Mix in the lemon juice, salt and sugar. Dump the apple mixture into a strainer placed over a bowl to remove excess liquid. Set your oven to heat to 375 degrees F.
  3. Cut each pastry sheet into four squares. Place two tablespoons of apple filling in the center of each one. Dip a finger into the excess apple juice and run it along two adjacent edges of a piece of dough. Fold the opposite corner over to the wetted sides and crimp closed with a fork. Repeat with the remaining dough squares and filling. 
  4. Mix the cinnamon and sugar together.
  5. Move the Apple turnovers to a baking sheet with a spatula. Wet the top of the fritters lightly with water (with a pastry brush, water bottle, etc.) and sprinkle with cinnamon sugar mixture. Place them in the oven to bake for 35 minutes. Remove to a wire rack to cool for 10 minutes. Serve.

Notes

These apple turnovers can be made ahead thru step 3 and covered with plastic wrap in the fridge, up to 24 hours. When you’re ready to bake them, remove the plastic wrap and proceed with the recipe as written.
