This light, sweet, and delicious Applesauce Picnic Cake is perfect for any sunny getaway, super easy to make, and also goes great with your favorite hot beverage.
1 stick unsalted butter, melted and cooled
1 and 1/2 cups granulated sugar
2 large eggs, lightly beaten
1 (23 ounce) jar unsweetened applesauce
2 cups all-purpose flour
2 tablespoons cocoa powder
1/2 teaspoon cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pecans, chopped fine
1/2 cup mini chocolate chips
1/2 cup dried apple slices, chopped fine (optional)
Prepare a 9 x 13 inch baking pan by spraying it with cooking spray. Set your oven to heat to 350 degrees F, and an oven rack to the center position.
In the bowl of a stand mixer (or a large mixing bowl) combine the butter, sugar, eggs and applesauce. In a separate mixing bowl, whisk together the flour, cocoa powder, cinnamon, baking soda and salt.
With the mixer running on low, slowly add the flour mixture into the applesauce mixture, stopping to scrape the edges of the bowl if needed. Once combined, mix on medium speed for about a minute.
Pour batter into prepared pan. Sprinkle the top with the chopped pecans, chocolate chips and chopped dried apples. Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean. Let cool and serve.
