A simplistic yet delicious go-to dinner soup to satisfy your soul after a long day of work, you really can’t go wrong with this versatile Gluten-free Swiss Potato Soup that the whole family will enjoy!
I developed this simple Gluten-free Swiss Potato Soup to help my dad stay away from wheat. Sadly, he can’t eat some of his favorite things anymore, like the homemade bread I taught him to make just a few months ago.
How to make Gluten-Free Potato Soup from Scratch
Put some heat under a stove-top Dutch oven, roll up your sleeves and get ready to enjoy the delightful process of creating a simple soup from scratch. It’s all about building flavors in your pot as you go, so our foundation (and funny enough our garnish) will be bacon!
Browning chopped bacon in our pot releases (renders) the fat in the bacon so we have smoky bacon grease to cook in. It also creates some brown bits that stick to the bottom of the pot. This is called “fond” (it’s french…) and it contains tons of highly concentrated flavor compounds that will greatly enhance our soup! Yay Bacon!
When the diced onion is added to the hot bacon fat, it absorbs the great flavors in it, while also releasing its own onion-y juices. The onion juice helps to free the fond from the bottom of the pot so we can stir it into our soup (and it doesn’t burn on the bottom).
Please, don’t use water for making soup. Never ever.
Next, we’ll add chicken broth, potatoes, salt, pepper, and some dry herbs. Cooking with broth is a great way to sneak more flavor into your soups instead of adding just plain water.
To give the soup it’s rich flavor, we’ll add milk that has corn starch mixed into it. When the soup comes to a boil, the cornstarch thickens it, adding a nice hearty texture.
Off heat, a heaping 1 and 1/2 cups of shredded swiss cheese is stirred into the soup, adding more richness and flavor. This soup is so simple and delicious, I am 100% sure it will become a family favorite!

This rustic and delicious gluten-free Swiss Potato Soup really hits the spot after a long day.
- 7 bacon strips, chopped
- 1 small onion, diced
- 3 cups chicken broth
- 6 russet potatoes, peeled and sliced into bite-sized pieces
- 1 teaspoon dried crushed rosemary
- 2 teaspoons salt
- 1/4 teaspoon fresh ground pepper
- 3 tablespoons cornstarch
- 3 cups of milk
- 1 and 1/2 cups shredded swiss cheese
- fresh chopped rosemary or sliced scallions to garnish (optional)
- Cook chopped bacon in a large Dutch oven over medium heat until crispy. Remove and set aside on a paper towel-lined plate.
- Add onion and cook in bacon drippings, stirring often, until translucent and browned. Add broth, potatoes, salt, and pepper. Bring to a boil, then reduce heat to simmer the soup uncovered for about 10 minutes and potatoes are fork-tender.
- Whisk the cornstarch and cold milk together, then whisk the milk into the soup. Turn the heat back up to get a rolling boil, and boil for 1-2 minutes. The soup should be thick and bubbly.
- Remove the soup from heat and stir in the cheese. Ladle into individual serving bowls and top with bacon. Sprinkle with rosemary or scallions if desired. Serve.
