Description

Moist and deeply flavored chocolate chocolate chip muffins lightly spiced with ginger, allspice, and clove. Topped with a walnut streusel.


Ingredients

Muffins

  • 1 3/4 cup all-purpose flour

  • 1 teaspoon baking soda

  • 3/4 teaspoon salt

  • 1/4 teaspoon ground cloves

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon ground ginger

  • 3/4 cup boiling water

  • 3/4 cup cocoa powder

  • 3/4 cup sour cream

  • 1 teaspoon espresso powder

  • 1 teaspoon vanilla extract

  • 1 1/4 cups brown sugar

  • 3 large eggs, lightly beaten

  • 1 cup milk chocolate chocolate chips

Streusel

 

  • 1/2 cup toasted, chopped walnuts

  • 4 tablespoons flour

  • 4 tablespoons brown sugar

  • 2 tablespoons room temperature salted butter


Instructions

 

  1. Set an oven rack to the middle position and set the oven to heat to 375 degrees F.

  2. In a large mixing bowl, whisk together the flour, baking soda, salt, cloves, allspice and ginger. Set aside.

  3. In a medium mixing bowl, whisk together the hot water and cocoa powder. Whisk in the sour cream, espresso powder, vanilla extract and brown sugar until smooth. Next, whisk in the eggs, then the chocolate chips.

  4. Prepare the streusel by gently pressing the ingredients together with a fork until crumbly. 

  5. Place wrappers into your muffin tin (or grease each cup if not using wrappers) and fill each with approximately ¼ cup of batter (it should nearly be to the top). 

  6. Sprinkle the streusel over the top and bake muffins for 15-20 minutes, or until a toothpick inserted into the center of the center muffin comes out clean. Let cool in the tin for about 5 minutes before removing to cool on a wire rack.
