- 2 cups all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup unsweetened coconut milk
- 3/4 cup Chosen Foods Coconut Oil Mayo
Instructions
- Set your oven to heat to 450 degrees F. Whisk together the flour, sugar, baking powder, baking soda and salt in a mixing bowl. Whisk together the coconut milk and mayo in a separate container. Pour the mixture into the dry ingredients and gently fold until just combined. (Don’t over mix.)
- Drop by large spoonfuls onto rimmed baking sheet lined with parchment paper, or mold into squares by sprinkling the dough generously with flour and using a pizza cutter.
- Bake for 12-14 minutes until golden brown. Serve with jam, butter, honey or whatever your heart desires.
