I can’t emphasize enough how delicious and good for you this recipe is. Tender lean pork strips surrounded with steamed broccoli and red bell pepper all tossed and fried up with a homemade from scratch ginger garlic sauce. I think it’s the sauce that really makes this recipe outstanding! Before you begin with the vegetables and meat, you’ll whip up the sauce in a blender so it’s ready when you need it :0)sizzling broccoli pork stir fry

To get started, sauté up some chopped bell pepper and minced yellow onion. I always like to sprinkle a pinch of salt on my onion as it cooks. Just wanted to share a fun ‘good cooking’ tip with y’all :0) It really helps to season and take the bite out of the onion. I do this every time I sauté onion, for any recipe. Once they are softened and starting to brown, remove the peppers and onions and set aside.

Now, pour in your garlic ginger ‘sauce’ and cook it for a few seconds to bloom the flavors of the garlic and ginger. This will also help to cut the harsh edge of raw ingredients and infuse the flavors throughout your food. You now have some great flavors in your pan (or wok) to brown the pork. Bombs away baby! Add that pork in and sprinkle with soy sauce. I love hearing the sizzle when the pork is added to a hot pan! Try to distribute it in a single layer and leave it alone for at least one minute so one side can brown nicely. Color equals flavor :0) Cook the pork until it is is mostly done (not all the way!) Then add in some chicken broth and your steamed broccoli. Stir and toss the broccoli and meat for a few minutes to finish cooking them. Stir in a bit of cornstarch to thicken the sauce and add your onion and bell pepper back to the skillet. Stir it all around for a few seconds, and you’re done! Please feel free to garnish with toasted sesame seeds, I flat out forgot them for the photo shoot! They’re cute and tasty too, dang it!

Plus you’re getting a great serving of protein from the lean pork tenderloin. It is so important to incorporate fresh fruits and veggies into our daily diets. I know I’m preaching to the choir here, and I could do a much better job of this. But I have a ginormous sweet tooth (have you seen some of the sweets I have on my blog?!) But seriously, I do try, I promise :0)

Broccoli Pork Stir Fry

Description

Stir Fry seasoned with a freshly homemade ginger garlic sauce. Your mouth will be happy and your body will be healthy. (It will thank you.)


Ingredients

Scale
  • 3 cups broccoli florets, lightly steamed (still a bit crunchy)
  • 1 cup chicken broth
  • 2 tablespoons chopped garlic
  • 2 tablespoons peeled, chopped ginger
  • 2 teaspoons olive oil (not extra virgin)
  • 1 small yellow onion (about 1 cup diced)
  • 1 red bell pepper, halved, seeded and diced
  • 1 pound boneless pork tenderloin, cut into thin strips 1/2 inch wide, about 2 inches long
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon cold water
  • 1/2 teaspoon corn starch
  • 1 tablespoon toasted sesame seeds to garnish if desired

Instructions

  1. In a blender add 1/2 cup of chicken broth, ginger and garlic. Blend until mixture is minced well. Set aside.
  2. In a large nonstick skillet or wok, set temperature to medium high heat and add one tablespoon of olive oil. Add in the onion and bell pepper and saute for about 5 minutes, or until vegetables become tender and start to brown. Remove from skillet, set aside and cover with foil.
  3. Add another tablespoon of olive oil to the skillet, and pour in the ginger garlic sauce. Boil it for about 30 seconds to a minute, stirring constantly (You’re scraping up all the flavor left from the onion and veggies so it can incorporate into your stir fry.)
  4. Next add in the pork in a single layer and sprinkle the soy sauce over it. Let it cook, without stirring, for about one minute. Stir and cook for an additional two or three minutes, until the pork is mostly browned. Add the remaining 1/2 cup of chicken broth and bring to a boil.
  5. Add the broccoli. Cook and stir occasionally for about three minutes. Mix the cornstarch and cold water. Move the stir fry contents to the edges of the pan and pour in the cornstarch mixture in the center. Stir to thicken the sauce. Then add in the onion/bell pepper mixture. Stir it all together and remove from heat. Serve over steamed jasmine rice and sprinkle sesame seeds on top. Serve.
