Easy Strawberry Pink Fluff
I thought I’d try to squeeze in one more recipe before the big Christmas day feast, and hopefully this recipe for Easy Strawberry Pink Fluff will come in handy if you are looking for a last minute side dish to bring to dinner! It’s definitely not made from scratch, but it is so stinkin’ delicious I always get requests to bring it again or share the recipe. There is an hour of fridge chilling time involved, so when whipping up a batch I would definitely keep that in mind.
Everybody has their version of Easy Strawberry Pink Fluff
Yes, I’m sure you’ve had many a fluffy jello salad, there are countless versions. This one skips the cottage cheese, and goes straight for the good stuff (the bad stuff really, hello sugar!) Easy Strawberry Pink Fluff is simply made with a box of Strawberry Jello, a box of Vanilla Pudding, Cool-Whip, marshmallows and sliced strawberries. It’s like eating a dreamy strawberry flavored cloud. Soooo yummy!
You could use this same recipe for any flavors you choose, but I’ve found this particular flavor combination of Vanilla and Strawberry particularly delicious. It’s so crazy easy, my kids really love to help me with it too.
This dish really classifies as a dessert, but its just so good that you want to make it a side dish. That way you can feel justified in eating your second and third helping (okay so maybe that’s just my stomach taking over my brain). Whatever it is, it’s dang good tastin’ and if you’re looking for one more side dish to have at your party, or bring to someone else’s party, well here it is. Enjoy!

With a whisk or electric mixer, stir up the jello/vanilla pudding mixture. Gently fold in one thawed container of Cool-Whip, marshmallows and strawberries. Chill for one additional hour to soften the marshmallows and set the dessert. Serve.
