The combination of savory bacon and herbs, mixed with sweet corn and a little smoky authentic Hatch chile heat offer you a dinner bowl nothing short of amazing.

There is a secret ingredient in this recipe that really puts it over the top- what do you think it is? It’s not mentioned above. You’ll have to keep reading to find out!

What are Hatch Chile Peppers?

Hatch Chile peppers are world famous for their delicious flavors, produced by the unique climate and soil composition that exists only in the Hatch Valley of Southern New Mexico. These factors combine to grow exceptional-tasting chile peppers with smoky, sweet, and hot flavor notes. More people discover Hatch Chiles each year, and their popularity continues to grow.

Growing up in New Mexico where chile peppers are an integral part of the culture, I know that Hatch chiles have earned a reputation for being the best of the best. I personally only use authentic Hatch in all my cooking because it simply tastes amazing. You should be able to find canned Hatch chile in any supermarket these days, or you can order it directly like I do. Frozen chile is much, much better tasting than canned!

The Hatch Chile Store is the premiere website for ordering your Hatch chile– they are incredibly good at shipping fresh authentic chile right to your door, whatever variety and hotness lever you prefer. It’s where I get all my Hatch Chile, and I must say the flavor really does stand out above any other chile pepper variety.

Wooden baskets at a farmer's market are filled with fresh New Mexico chiles; most of them are green, but a few are turning red.

Make Ultimate Slow Cooker Green Chile Corn Chowder for the Win

You can see below how hearty this chowder is – packed with corn (mostly hiding underneath everything else), bacon, roasted and chopped Hatch green chile, red potatoes, onion, and herbs. A touch of honey brings out the sweet corn flavor and pairs perfectly with the mild green chile heat.

Here I have included the onions raw, which is TOTALLY fine. But if you have some extra time, I would sauté the diced onion in the bacon drippings before adding it to your slow cooker. Cooked and slightly browned onion has a deeper, more complex and delicious flavor.

You may notice that I am using a most wonderful invention here: A slow cooker liner! YESsssss! I LOVE these liners and they make cleaning up a breeze. No more scrubbing scorched food out of my slow cooker insert. Check them out right here.

Below you can see now I’ve added the chicken broth and stirred everything together. If the chicken broth doesn’t completely cover the contents in liquid, add enough water to ensure all the ingredients are covered.

And here, as promised, is the secret ingredient to making a delicious, creamy, full-bodied, corn chowder.

Cream Cheese! Just before serving, blend half a brick of cream cheese and some of the soup in a blender until creamy smooth. Then pour it back into the slow cooker.

Ladle out servings of this tasty chowder with more cooked bacon sprinkled over the top. I added a little chopped parsley here for color, but you can add a few sliced green onion or just skip the green altogether. It will taste amazing either way!

Ultimate Slow Cooker Green Chile Corn Chowder

  • Author: Emily
  • Total Time: 6 hours 30 minutes
  • Yield: 810 servings 1x

Hearty Bacon, sweet corn, Hatch green chile, and diced red potatoes form the backbone of this savory chowder, seasoned with onion, garlic, thyme and the secret ultimate ingredient- cream cheese.

  • 1 pound of bacon, chopped and cooked, divided
  • 1 onion, minced
  • 1 pound of red potatoes, scrubbed, diced to 1/4 inch cubes
  • 3 cups corn kernels, either canned, frozen, or fresh off the cob
  • 2 (16 oz) cans of creamed corn
  • 1/2 cup diced Hatch green chile (whatever hotness level you prefer)
  • 5 cups chicken broth
  • 1 teaspoon ground thyme
  • 1 teaspoon garlic powder
  • 1 bay leaf
  • salt and pepper
  • 1 tablespoon honey
  • 4 ounces of cream cheese, cut into chunks

  1. Place half the cooked bacon, onion, potatoes, corn, creamed corn, Hatch chile chicken broth, thyme, garlic powder, bay leaf, 1/2 teaspoon salt, 1/4 teaspoon pepper and honey into an 8 quart slow cooker. Cover and cook for 6-8 hours on low.
  2. Ladle 1/2 the chowder into a blender. (Or as much as your blender will allow.) Add the cream cheese pieces. Place the lid on and open the small hole in the center. Hold a towel or washcloth over the hole and blend the contents until smooth and no chunks of cream cheese remain.
  3. Stir the blended chowder into the rest of the chowder. Serve, sprinkling with the remaining bacon on top.

The small opening in the lid of most blenders is to be opened when blending hot items. It allows the steam to escape, so the contents of your blender do not blow out the top and make a huge mess.

If you have time, sauté the onion in the bacon grease until the onion becomes translucent and starts to brown. Then add it into the slow cooker in step 1. This will add a wonderful depth of flavor to your chowder.
