I don’t know about you , but I’m definitely getting excited about the warm summer days fast approaching us. Since I have a foodie brain, I’ve been thinking up all kinds of recipes to celebrate the changing of the seasons. This simple Mocktail Fruit Salad recipe makes the most delightful side dish to any good weather cookout, barbecue, picnic or family gathering so make sure to bookmark this recipe. Mocktail Fruit Salad - The Goldilocks Kitchen

This simple mix of freshly cut watermelon, strawberries, mango and pineapple chunks is perfectly paired with a delicious agave-lime syrup, lime zest and fresh mint. It is beautiful and amazingly delicious~ fresh and bright just like a warm spring or summer day.  I created this recipe to taste like a virgin fruity drink that you would enjoy by the beach or poolside.  (If you want to toss a tablespoon or two of tequila in it~ I’ll leave that up to you :0)

If you could even just smell the delicious fresh fruit in this salad you’d know it’s a dynamite recipe that is a keeper for sure. If you can, prepare it about an hour before serving so it’s chilled but still fresh.  If it sits more than a day in the fridge it will get soggy and bland. Enjoy!

Mocktail Fruit Salad

Description

This beautiful and simple salad is rich with bright flavors and colors that make a perfect accompaniment to a BBQ meal or picnic.


Ingredients

Scale
  • 4 cups diced watermelon
  • 3 cups diced pineapple
  • 2 cups sliced strawberries
  • 2 cups diced mango
  • 1/4 cup agave nectar
  • 3 limes, zested and juiced
  • 1 Tablespoon minced fresh mint

Instructions

  1. Mix watermelon, pineapple, strawberries and mango in a large mixing bowl.
  2. Whisk together the agave nectar, lime juice and zest. Pour into the fruit bowl and toss to combine.
  3. Garnish each serving with a sprinkle of mint on top and serve immediately or chilled.

Notes

This salad is best served the day it’s made. It will get soggy and bland if it sits for more than a day.
