NM Food Made Easy Lesson 1: Red Chile From Pods

“Red or Green?” The official state question about your chile sauce preference is quoted so often in New Mexico that it’s become a bit cliche. However, the consumption of chile is practically a religion in the Land of Enchantment and will continue as it has for centuries. Today I will walk you through the makings of a very fine batch of authentic Red Chile Sauce.
