Easy-Peel Boiled Eggs

This method gives you consistent results without any additives to the water like vinegar or baking soda. Just water, heat, and eggs can create beautiful smooth peeled eggs every time!

The trick isn’t to use old eggs, or vinegar, or baking soda or anything added to your boiling water. So what is the REAL trick to Easy-Peel Eggs???

Easy-Peel Boiled eggs require A STEAMER BASKET!

Yep. Steaming the eggs above the water, not in the water, will cook them quickly enough to prevent the membrane inside the shell from sticking to the egg white! I have to thank Jill over at The Prairie Homestead for this incredibly helpful info!

Raw eggs are placed into a metal collapsible steamer basket to make Easy-Peel Boiled Eggs.

It’s essential to use a steamer basket like the one shown in the pictures. The basket with eggs must be placed into a pot of water that is already at a full boil. The collapsible handle ensures that the lid can completely close.

A steamer basked filled with white raw egg is lowered into a pot with a little boiling water in the bottom to make Easy-Peel Boiled Eggs.

Before you begin to heat the water, test your steamer basket to ensure that it will completely fit inside your pot with a lid on it.

Making sure your steamer basked fits into your desired cooking pot before proceeding with the recipe.

Steaming the eggs quickly does many things for you- the steam will uniformly heat the eggs (as long as you don’t overcrowd the basket) AND most importantly, the eggs cook quickly (about 12 minutes), keeping the membrane between the shell and the egg white from becoming sticky because of science. :0)

It’s also important that once your eggs are finished steaming that you immediately place them into a bowl of ice water to stop them from cooking any further. Overcooked eggs get that unsightly green layer on the outside of the yolks.

Peel your eggs after they have cooled enough to handle. If you wait and peel them later, that inner membrane has a habit of getting sticky and your eggs won’t be as pretty. Peel them right away.

I used floss to cut the eggs pictured above. I wrapped unflavored floss around each egg and then just pulled the floss tight to get a nice even cut.

Easy-Peel Boiled Eggs


Description

The real trick to perfect-peel eggs every time doesn’t require anything other than eggs, boiling water, and a steamer basket!


Ingredients

Scale
  • Large pot with a lid
  • metal steamer basket with handle
  • 46 large eggs

Instructions

  1. Fill a pot with 1 and 1/2 inches of water and set it over medium-high heat.
  2. When the water comes to a full boil, place eggs into a steamer basket (with legs folded out) and carefully lower the basket into the pot. Ensure the bottom of the steamer basket is not touching the surface of the water.
  3. Cover tightly with a lid and set a timer for the desired doneness, 10 minutes for a very soft yolk, 12 minutes for soft yolks, and 14 minutes for hard yolks.
  4. When the eggs are done steaming, carefully remove the lid and using tongs, remove the eggs and place into a bowl of ice water to cool for 10 minutes.
  5. Beginning at the rounder end, crack eggs by gently tapping all over and rolling with a gentle hand on a hard surface. Peel the shells off and store the eggs in an air-tight container in the refrigerator.

Notes

Do not overcrowd the steamer basket with too many eggs, or the cooking times listed above will not work. Ensure that all eggs are in a single layer on the bottom of the basket.
