Spinach Feta Pesto Pasta Salad
Oh My Goodness! Let me share with you one of the most delicious pasta salad recipes I’ve ever tried- Spinach Feta Pesto Pasta Salad. (I know that’s a mouthful, I just call it Pesto Pasta Salad for short.) Just one taste of this beautiful pasta salad brings visions of a summer picnic on a Grecian island overlooking the ocean. It’s fresh, packed with mediterranean flavors, and makes a ton of food! Definitely a recipe for sharing; you’ll be the popular one at the party because everyone will be asking you for this recipe! Then you tell them to visit The Goldilocks Kitchen to find it :0) (I have no shame…;)
The best thing about this salad is it’s made with fresh pasta, spinach and cherry tomatoes. I would recommend using fresh homemade pesto if you can (this is how I make mine), or if you don’t have the time for that, pick up a jar at the grocery store. This Spinach Feta Pesto Pasta Salad is a great way to get some extra fiber and greens in your diet and for an even healthier version you can switch out the classic penne pasta for whole wheat penne instead.
There is a secret ingredient to this recipe~ a cup of ranch dressing really adds some pazazz and extra herbs for great flavor. Just mix it with a little milk first, then add it to the pasta along with the rest of the ingredients.
This recipe for Spinach Feta Pesto Pasta Salad was a huge hit at my last church activity; everyone was asking for it! It was so amazing I of course had to share it on my blog :0) This pasta salad recipe is a keeper for sure, and thanks to my friend Jenn for sharing it with me!
