Looks great. How do you make your green chili sauce? Is it simply smashing up the green chilies?

      Hi Kay!
That’s a great question. You don’t have to use green chile sauce, you can just use canned green chilies. I have a great green chile sauce recipe, but I’m saving it for my cookbook. I’m hoping to publish it this fall and it will be all about New Mexico cooking made easy. Classic green chile sauce is made with peeled/roasted green chile (usually anaheim, hatch or poblano varieties) that is chopped and cooked on the stove with a little onion and flour to thicken it. If you google it you’ll find lots of variations ;0) Hope all is well with you and your family!

Great article. This article is well written and I agree with everything you said. Having a healthy breakfast can change life so much. Thanks for the breakfast inspiration! I think breakfast is my absolute favorite too–I go to bed and think about what I will have too. I almost always go sweet for breakfast but sometimes love some savory—especially like on the weekends!
