I have a new recipe to share with you, and it’s delicious, easy and best of all, healthy. Do you have trouble finding time to eat a healthy breakfast? I know I do. I would love to start every day off right with a healthy breakfast because I just feel good all day. If I get up in the morning before my kids wake up then I usually have the time to fix myself a healthy breakfast.

What’s nice about this new recipe for Green Chile Turkey Breakfast Cups is that they’re super fast to throw together, and it makes enough for multiple days. Just pop them in the microwave for a few seconds the next morning and you have a ‘no effort’ healthy breakfast!

I love to cook with fresh ingredients, but if you’re short on time just purchase a couple cans of green chile to use in this recipe. I used my homemade sauce in the pics you see here. If you’re not familiar with New Mexican cuisine, chile peppers are a staple around here. However, I have seem them stocked in grocery stores all across the country, both fresh and canned. They can be mild to hot so make sure you read the label before you throw them in your cart.

Green Chile Turkey Breakfast Cups


  • Total Time: 22 minutes

Description

Delicious, fast and easy, just two of these plus a beverage of choice will fill you up in the morning.


Ingredients

Scale
  • 6 ounces thinly sliced turkey (12 slices)
  • 1/2 cup green chile sauce or canned chopped green chiles
  • 12 large eggs
  • 1/4 cup shredded cheddar cheese
  • 23 Tablespoons chopped cilantro to garnish
  • non-stick cooking spray

Instructions

  1. Set your oven to heat to 400 degrees F. Spray a 12 cup muffin tin with non-stick cooking spray. Line each cup with a slice of turkey. Place about 1 tablespoon of green chile sauce/green chiles in the bottom of each cup, followed by one egg. Bake in the oven for 10-12 minutes until eggs are firm. Sprinkle each with cheese and cilantro and serve.

  • Cook Time: 12 minutes

  1. Looks great. How do you make your green chili sauce? Is it simply smashing up the green chilies?

      That’s a great question. You don’t have to use green chile sauce, you can just use canned green chilies. I have a great green chile sauce recipe, but I’m saving it for my cookbook. I’m hoping to publish it this fall and it will be all about New Mexico cooking made easy. Classic green chile sauce is made with peeled/roasted green chile (usually anaheim, hatch or poblano varieties) that is chopped and cooked on the stove with a little onion and flour to thicken it. If you google it you’ll find lots of variations ;0) Hope all is well with you and your family!

  2. Great article. This article is well written and I agree with everything you said. Having a healthy breakfast can change life so much. Thanks for the breakfast inspiration! I think breakfast is my absolute favorite too–I go to bed and think about what I will have too. I almost always go sweet for breakfast but sometimes love some savory—especially like on the weekends!
