Ginger lime float

Looking for a simple and family friendly way to celebrate Saint Patrick’s day? Ginger-Lime Floats are a fun and delicious drink to liven up any party, not just St. Patty’s day! Ginger ale with a touch of mint is poured over scoops of lime sherbet and to top it off, mounds of sweet whipped cream. I love fruity drinks, especially ones topped with whipped cream….mmm mmm yes please!

Here in New Mexico it’s already spring time and the days have been beautiful and warm, with highs in the 70’s. I’m already thinking summery fruit drinks (as you can see). But I wanted to come up with some way to celebrate Saint Patrick’s Day. So I created Ginger-Lime Floats, a great way to cool off for any sunny summer’s day. Kids love these too; mine hoovered theirs up in less than a minute.

My boys are totally into Saint Patrick’s Day. After watching Disney’s Darby O’Gill and the Little People we helped our kids build an elaborate Leprechaun trap, complete with gold rocks!  Who knows, maybe my kids will get lucky this year and really catch one :0) Hope you enjoy these floats, give them a try!

Description

A refreshing and simple family friendly fruity drink.


Ingredients

Scale
  • 1 Liter bottle of Ginger ale
  • 1 quart lime sherbet
  • 1/4 tsp mint extract
  • 1 can of whipped cream

Instructions

  1. Carefully pour the 1/4 mint extract into the bottle of ginger ale. Place two or three scoops of ice cream in each mug. Pour ginger ale over the top of the ice cream until cup is full. Top with whipped cream and serve.
