I will admit when I first read about recipes for ‘mayonnaise biscuits’ floating around the internet I wrinkled my nose at the thought. Have you ever heard of Mayonnaise biscuits? Or maybe ‘Surprise ingredient’ biscuits? I had read that the food fats contained in the mayo are a perfect replacement for the butter and oil used to make traditional American biscuits, yet there is no detectable taste of mayo in the biscuit. So I set my mind to try it and came up with this recipe for Quick Fluffy Coconut Biscuits.

Besides it’s clean ingredients and crazy good taste it’s non-GMO, doesn’t contain gluten, soy or canola, and is made with cage-free, organic eggs. Plus it’s a great source of healthy ‘fats’ (MCT’s) that have been shown to have some great health benefits. I decided to go rogue and make these biscuits completely dairy free by using some unsweetened coconut milk I had in the fridge. Whole or 2% milk will work just fine as a substitution, but I don’t recommend using skim milk. It doesn’t have enough milk fat for biscuits. All I had to do was mix some flour, sugar, salt and baking powder and mix in the Coconut Oil Mayo and coconut milk.  I was floored by how amazing, easy and delicious these biscuits turned out! I should mention there is actually no coconut taste in Quick Fluffy Coconut Biscuits, they just taste like great moist and fluffy homemade biscuits. I’m so excited to share this recipe with you, as I’ve made several batches since the first and my whole family just gobbles them up.

This particular recipe makes biscuit dough that is really sticky (and so moist and good). You can use the drop method with greased spoonfuls onto parchment paper or mold it into squares like I do in the photos. If you do this, you’ll need to sprinkle the parchment paper generously with flour before you dump the dough out onto it. Then sprinkle flour generously over the top of the dough so it doesn’t stick like crazy to your hands. Mold it into a rectangle about 9X6X1 inches. Use a cookie cutter to divide into individual biscuits and spread them out just a bit from each other so they can properly brown. Then just pop them in the oven for about 12-14 minutes and they’re done!

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup unsweetened coconut milk
  • 3/4 cup Chosen Foods Coconut Oil Mayo

Instructions

  1. Set your oven to heat to 450 degrees F. Whisk together the flour, sugar, baking powder, baking soda and salt in a mixing bowl. Whisk together the coconut milk and mayo in a separate container. Pour the mixture into the dry ingredients and gently fold until just combined. (Don’t over mix.)
  2. Drop by large spoonfuls onto rimmed baking sheet lined with parchment paper, or mold into squares by sprinkling the dough generously with flour and using a pizza cutter.
  3. Bake for 12-14 minutes until golden brown. Serve with jam, butter, honey or whatever your heart desires.
