How to make taquitos?

Taquitos (“little tacos” in Spanish) are an authentic Mexican snack- mostly found at fast food restaurants south of the border, but you can definitely find them being made from scratch in Mexican home kitchens too! Let me explain how they are made:

Taquitos are a rolled and fried corn tortilla taco with any number of savory Mexican fillings. Sometimes they’re not even rolled, just folded in half like a traditional taco and fried. Not to be confused with “flautas” (Spanish for flute) which are made with flour tortillas vs. corn tortillas for taquitos.

Taquitos are incredibly easy to make at home. Just mix up a yummy filling of choice, place a strip of filling into a warm corn tortilla, then roll and fry in 1/2 inch of oil. Frying the seam side down first in shallow oil will lock it in place and keep it from unrolling when you flip it over to fry the other sides.

You can fry a whole bunch of taquitos in batcheswhich I love because then I can make a whole bunch in a very short amount of time. I LOVE to triple the recipe below, then store most of them in the freezer for homemade freezer snacks. Just give ’em a little nuke in the microwave and they’re ready to eat!

Taquitos make the perfect on-the-go snack or meal for hectic days when you don’t have time to cook. And the recipe for Green Chile Chicken Taquitos below will taste a gazillion times better than store bought. 100%!

What are Hatch Chile Peppers?

Hatch Chile peppers are world famous for their delicious flavors, produced by the unique climate and soil composition that exists only in the Hatch Valley of Southern New Mexico. These factors combine to grow exceptional-tasting chile peppers with smoky, sweet, and hot flavor notes. More people discover Hatch Chiles each year, and their popularity continues to grow.

Growing up in New Mexico where chile peppers are an integral part of the culture, I know that Hatch chiles have earned a reputation for being the best of the best. I personally only use authentic Hatch in all my cooking because it simply tastes amazing. You should be able to find canned Hatch chile in any supermarket these days, or you can order it directly like I do. Frozen chile is much, much better tasting than canned!

The Hatch Chile Store is the premiere website for ordering your Hatch chile– they are incredibly good at shipping fresh authentic chile right to your door, whatever variety and hotness lever you prefer. It’s where I get all my Hatch Chile, and I must say the flavor really does stand out above any other chile pepper variety.

Wooden baskets at a farmer's market are filled with fresh New Mexico chiles; most of them are green, but a few are turning red.

Green Chile Chicken Taquitos

  • Author: Emily
  • Total Time: 25 minutes
  • Yield: 20 taquitos 1x

Description

Fire roasted chopped Hatch green chile, shredded chicken, cream cheese, salsa, and cheddar cheese create a deliciously creamy taquito filling with a little kick of heat. Pack this filling into a crispy fried corn tortilla for a gluten-free meal!

Ingredients

Units Scale
  • 1/23/4 cup vegetable oil or other frying oil of your choice
  • 23 cups shredded cooked chicken (or rotisserie chicken)
  • 4 ounces room-temperature cream cheese
  • 1 cup of fire roasted chopped Hatch green chile (whatever hotness level you prefer)
  • 1/2 cup corn and black bean salsa
  • 1/2 cup shredded cheddar cheese
  • salt
  • pepper
  • 20 corn tortillas

Instructions

  1. Place a 12-inch non-stick skillet over medium high heat and add vegetable oil to a depth of about 1/2 an inch.
  2.  While the frying oil heats up, place chicken, cream cheese, green chile, salsa, cheddar cheese, 1/4 teaspoon salt and 1/4 teaspoon pepper into a large mixing bowl. Combine with a large spoon until evenly mixed.
  3. In batches of 10 or so, wrap tortillas in damp paper towels and microwave for about 15 seconds to make them pliable. Place approximately 1/4 cup filling just off-center inside a damp tortilla, spreading the filling out roughly in a line. Tightly roll up the tortilla and set it aside on a clean plate, seam side down. Repeat until you have used up all the filling and/or tortillas
  4. Using tongs, place several taquitos seam side down into the frying oil, leaving about 1/2 inch of space between each one. Fry for about 30 seconds to 1 minute on the seam side, or until golden brown. Roll taquitos over to fry other sides. When all sides are golden brown, remove and place onto a paper towel-lined plate or onto a wire rack to cool. Repeat frying batches of taquitos, refilling frying oil and allowing it to reheat to temperature if needed. Serve with sour cream, guacamole or more salsa.

Notes

These taquitos make an excellent freezer meal or snack. Just place leftover taquitos into freezer bags and warm them individually in the microwave. Alternatively, you can reheat them by refrying them in hot oil for a crispier exterior.
