When it comes to healthy snacking, look no further than Silky Peanut Butter Dip! Dunk fresh fruits, veggies, crackers, anything that goes well with peanut butter into this delicious dip that cuts the fat and calories of good old peanut butter by nearly two thirds! Plus it’s got a pretty good amount of protein to help you feel full longer. I am in love with it’s light and fluffy texture, and it helps me to much away on celery, carrots, apple slices, grapes, bananas and all kinds of other raw, healthy foods. Guilt free snacking people, it’s a win-win!

Silky Peanut Butter Dip is simply peanut butter that has been thinned out with tofu. Now wait! Don’t freak out~ tofu may be foreign to you (I certainly don’t eat it on a regular basis), however I urge you to give it a chance, just at least for this recipe. What is tofu exactly anyway?

Tofu is a food made of condensed soy milk that is pressed into solid white blocks. It originated in China, and the process is quite similar to how cheese is made.

Silky Peanut Butter Dip is made by blending peanut butter, soft tofu, a little honey and lime together in a food processor until smooth. The tofu takes on the taste of the peanut butter (tofu barely has any taste of it’s own anyway) and spreads the calories and fat out. Silky Peanut Butter Dip just tastes awesome!

If you’ve never tried tofu before, don’t worry, I never had either until recently. If you’re wondering where to find it in the grocery store, it’s usually in the produce section somewhere because it needs to be refrigerated. Just a little tip there. And you’ll want to use silken or soft tofu for this recipe, not firm or extra firm tofu.

I am really pushing to eat healthier in my own life, so you’ll probably notice an uptick in the amount of healthy recipes I’ll be sharing in the near future. I’m particularly trying to avoid processed sugar and sweets generally. Quitting sugar altogether isn’t for me (moderation in all things is my healthy food motto); I sure do admire the self discipline it must take to achieve that goal; I flat out don’t have it.

Description

This absolutely delicious and addicting Silky Peanut Butter Dip cuts the calories and fat of straight peanut butter by almost two-thirds, while still giving you the benefits of a healthy protein snack. It goes great with freshly sliced fruits and veggies.


Ingredients

Scale
  • 2 cups soft or silken tofu
  • 2/3 cup peanut butter
  • 2 and 1/2 tablespoons honey
  • juice from 1/2 a fresh lime

Instructions

  1. Add all ingredients into a food processor. Process on high for about 10 seconds. Stop and scrape down the bowl. Continue to process until all ingredients are evenly incorporated and no streaks of peanut butter remain. Serve.

Notes

Store any leftovers in the refrigerator.
