Whipped Strawberry Honey Butter will delight your senses with the taste of honey kissed butter and sweet garden fresh strawberries on any slice of bread, crepe or bagel.
Start with a cup of sliced fresh strawberries. Add them to your food processor and sprinkle with a teaspoon of sugar to help them release their juices. Then process until only very fine bits of strawberry remain.
Set the processed strawberries aside to macerate (let their juices out) while you whip up the butter. I am a big fan of real butter and would recommend using it over margarine in this recipe, although margarine would probably be fine too. I use my handy stand mixer and whip two sticks of room temperature butter on high for about two minutes. A hand held mixer works great too!
Add fresh/runny honey to the butter and whip to combine, stopping to scrape the bowl at least once while you whip. Then whip in the strawberries, again stopping to scrape the bowl. You want to incorporate every last little bit of butter into your mixture.

Ingredients
- 1 teaspoon sugar
- 1 cup sliced strawberries
- 2 sticks of butter (1 cup), room temperature
- 1/4 cup honey
Instructions
- Add sliced strawberries to a food processor and sprinkle with sugar. Process until fine bits of strawberry remain. Set aside.
- Whip butter on high until smooth and lightened in color, about 2 minutes. Add honey and continue to whip until fully incorporated, scraping down the sides of the bowl.
- Add processed strawberry mixture and whip until incorporated, scraping the sides of the bowl. Serve at room temperature.
Notes
If butter is refrigerated, it will harden and become difficult to spread.
